Differences Between White and Black Truffle Oil


Truffle Oil, which is used as a finishing oil, actually comes up with two options that we can use differently depending on the recipe. The only difference between Black and White truffle oil is the aroma. Both truffle oils are very gourmet and very valuable. At the same time, the most important feature for both oils is that they lose their taste and aroma when cooked.

White Truffle Oil

White truffle oil is made from white truffles mushroom. Its taste and smell are reminiscent of garlic. White truffles get their special flavor from a special compound, bis methane. The taste is delicate and mild. It can be preferred for pasta, risotto or dishes with a light aroma.

Black Truffle Oil

Black truffle oil is made using black truffles. Its aroma is sharp, and it gets its flavor from dimethyl sulfide, just similar to cabbage and cauliflower. You can usually prefer black truffle oil in meat dishes or pizza.

Black Truffle vs White Truffle

Although black truffle oil is considered more valuable, in fact, white truffle oil is just as valuable and it is very difficult to choose between the two. Because both are a gourmet delicacy. In fact, it may be a situation that changes according to one's taste. While some people prefer the taste and smell of white truffle oil, some people may be addicted to black truffles. But white truffle oil can often be a better option for light and creamy foods because of its taste and smell. Black truffle oil, which has a slightly sharper aroma, can be preferred for stronger meat dishes. However, depending on your preference, you can replace the two truffles as you wish. This is up to your taste. White truffle oil will add a bitter and garlic flavor to the dishes, while black truffle oil will add a stronger flavor as it is a little more sulphureous. Due to the earthy and robust aroma of black truffle oil, if you want to use it in a light recipe, you will need to use less oil in quantity.
